Not a finished sauce. A head start.

Saucery makes dry sauce builders. Four of them. Each one is the hard part of a great sauce, the layering, the depth, the balance, dried down into a bag you can keep in the cabinet.

You bring the pan and the few minutes. Open a bag, bloom it in oil or stir it into tomato, and you get the kind of sauce that usually takes an afternoon. No jars of preservatives sitting in the fridge. No fillers. Just the base, done right.

Made by hand, in small batches

Every blend is mixed by hand here in Brooklyn, in batches small enough that I taste my way through each one. The saffron is real saffron. The chili is Calabrian. Nothing in here is hiding behind salt.

Why "builders"

Because that's what they do. They are not the whole meal and they are not pretending to be. They are the part you'd otherwise spend hours building, ready when you are. You finish it. That's the fun part anyway.
